  2. Take 250 grams all purpose flour (Maida)

  8. Get 1/2 cup Green Peas (boiled)

  12. Get 1/2 tsp fennel seeds
  13. Take 1/2 tsp whole coriander seeds
  14. Take 2 tbsp oil (for frying)
  15. Make ready 1/4 tsp mustard seeds
  16. Get 1/4 tsp turmeric powder
  17. Make ready To taste Salt
  18. Prepare To taste Red chilli powder
  19. Prepare as required Oil for frying (aprox 1 litre)

Instructions to make Samosa:

  1. For Cover: - - Mix all the ingredients (salt, oil) except water. - Add a little water at a time. - Pat and knead well for several times into a hard pliable dough. - Cover it and keep aside for 15 minutes.
  2. For Stuffing : - - In a bowl add mashed potatoes and all dry masalas (salt, chilli powder, coriander seeds,fennel seeds) and green chilles, ginger,green peas and Mix well. - In a deep pan or wok take 2 tbsp oil. Heat it up then add mustard seeds, turmeric powder. - After crackling add above mix of potatoes. Fry for 2-3 minutes. - Add coriander and keep aside.
  3. To make samosas : - - Make small rolls of dough and roll it into a oval shape. - Cut it into two parts like semi-circle.
  4. Now take one semi circle and fold it like a cone. Use water while doing so. - Place a spoon of filling in the cone and seal the third side using a drop of water.
  5. Heat oil in a kadhai and deep fry till golden brown (fry on a medium flame).
  6. Serve samosa sausage with tamarind chutney.
