- We will start by making biscuit crust. For that grind digestive biscuits in mixture grinder.
- Add grinded biscuits to a bowl than add to it 4 tbsp caster sugar and melted butter. Mix them all well. Mixture consistence should be like it holds a shape.
- Further we shall make strawberry sauce. Chop strawberry small chunks. Add chopped strawberry to pan and add to it 3 tbsp caster sugar. Turn on the flame and do not disturb strawberrys till sugar melts completely. As sugar melts and boils few minutes you will see water realising. Sugar water and acid released by strawberry will start thickening the mixture and would turn saucy. At this stage add agar agar or gelatin and let them melt inside. Keep the prepared sauce aside to cool down.
- Next chop and melted white chocolate on double boiler. Set it aside to bring it at room temperature.
- Now in a mixing bowl add cream cheese and 1/2 cup sugar and whisk them both well until fluffy.
- Now take a child Bowl and add whipping cream which should also be chilled. Beat it until its light and fluffy.
- Now in beated cream cheese add melted white chocolate and again beat it for few seconds. Than fold into it whipped cream. You may even add melted gelatin.
- Lets assemble everything! In mold initially layer the biscuits mixture followed by cream cheese mixture and strawberry sauce.
- Refrigerate it for at least 4 to 5 hours or overnight is more preferable. Slice it and enjoy!!
