- Prepare 1/2 cup diced mixed bell peppers
- Prepare 8 slices eggplant

- In an oven tray, place the diced bell peppers & cherry tomatoes, toss them in olive oil, sprinkle salt & pepper, grill these for 5 minutes. (We need to retain the crunch, just need the veggies slightly roasted).
- Next, place the eggplant slices in the oven tray, again drizzle olive oil, sprinkle salt & pepper & grill for 7 mins. Turn the eggplants upside down in between. Once grilled, roughly chop them and keep aside.
- Carve the bread, and cut equal sized crostinis out of the baggette and place on the oven tray. Drizzle a bit of olive oil and grill the bread to just slightly toast it for 2-3 mins and take out.
- Now we just need to assemble the dish. Take the crostini, smear a generous helping of the hummus, add grilled veggies on top, chopped olives, chopped rocket leaves and finally few pine nuts on top! Enjoy the treat!
