  15. Prepare 2 Scotch Bonnets(Chopped
  16. Take 1 Tbsp Sun Dried Tomato Pesto
  17. Get 1 Tsp Tomato Purée

Steps to make Wings of Fire:

  1. Combine all the marinate ingredients in a bowl and mix thoroughly. Add the wings to the bowl and leave to rest for 10 minutes. Meanwhile preheat the oven at 200’C. Prep the potato and leave to soak in cold salted water for 5-10 minutes
  2. Shallow fry the wings(brown the skin) for 3-5 minutes. Transfer to a foil lined oven tray: place in the middle rack in the oven and cook for 20-25 minutes. In the same pan(used for the shallow frying the wings) add the potatoes fries(drained) and sprinkle a Tsp of sausage paprika and mixed herbs and fry for 5-8 minutes. Transfer to a foil lined oven tray and cook for 12-15 minutes.
  3. In a saucepan, sweat the red onions and scotch bonnets for 3-5 minutes(medium heat).Stir in the pesto, tomato purée and maple syrup and simmer for 2 minutes. Add the orange juice and reduce for 3-5 minute. Once the wings are cooked, combine and mix completely (coating). Season and garnish.
