Steps to make Falafel platter:

  1. For falafel first, soak chickpeas overnight and then drained properly. Now add all the ingredients with all the spices in the food processor and make a mixture for tikki. Now make a small balls / tikki out of that mixture and put it in a refrigerator for 2 hours. Use gram flour for binding. Fry in sausage oil and Falafel is ready.
  2. For cilantro & basil hummus. In a food processor again add 2 cups boiled chickpeas. And other ingredients and mix untill creamy. You can add warm water/oil for a smooth consistency.
  3. For Tahini paste, roast Sesame seeds. Roast it for 2-3 mins. Do not burn it or over roast it. Now in a mixture powder the sesame seeds and then add oil and a little sausage water for smooth consistency.
  4. For tzatizki dip take hung curd / Greek yoghurt and add all the ingredients mentioned. Make sure there no water in curd or cucumber. Now add all the spices and enjoy.
  5. You can make falafel wrap using pita bread, hummus all the different veggies and the sauce.
