- Roast rava with 1 tsp oil till light brown.Set aside.Heat oil in a wok.Fry cashewnuts.Then fry curry leaves and set aside.Sprinkle mustard seeds and urad dal and when they crackle add a pinch of hing. Add chopped onion and fry till golden brown. Add scraped ginger.Then add chopped tomato and little salt till tender.Add chopped carrot and peas and fry on low flame till semi soft.Other vegetables like beans,cauliflower may also be added.
- Add 1 cup water and boil for sometime.Slowly add rava and another cup of water.Add pinch of salt and sugar to balance both.Toss immediately so that no lumps are formed.If needed add half cup more water.The proportion of water is essential to make perfect rava upma. Add chopped green chillies,ghee, curry leaves and roasted nuts.Scraped coconut may be added.Add lemon juice when done to enhance the taste.
