  3. Peel and dice tomato
  4. Deep fry eggplant until golden brown, place on kitchen paper towel to get rid of excess oil

  6. Add tomatoes and eggplant, stir gently
  7. Add tomato paste, salt, water (if needed) leave on low heat for 10 minutes
  8. Add cooked chickpeas, stir together and remove from heat
