  2. In a large saucepan add a splash of oil, medium heat add diced veg, garlic, and mixed herbs. Cook for 10 minutes or so until they start to soften and get a bit of colour. Then add tomato purée and seasoning. cook for a few more minutes.
  3. Once chicken is cooked separate the meat into a bowl and put aside, stock can be made from the bones if you want but stock cubes work just as well. (I do have a chicken stock recipe if needed)
  4. To the veg mixture add tinned tomatoes and stick and bring to the boil then reduce to a simmer for 30mins until everything is nice and soft. Add chicken and cook for a further 5 mins
  5. Blend if you prefer or leave it chunky, serve with fresh crusty bread 🥖
