Seitan is one of the most favored of current trending foods on earth. It’s easy, it’s fast, it tastes yummy. It is enjoyed by millions every day. They are nice and they look fantastic. Seitan is something which I have loved my entire life.

To begin with this recipe, we must first prepare a few ingredients. You can cook seitan using 14 ingredients and 5 steps. Here is how you cook it.

The ingredients needed to make Seitan:

  1. Get 250 g firm tofu
  2. Take 150 ml milk alternative
  3. Make ready 2 tsp miso paste
  4. Prepare 2 tsp yeast extract
  5. Make ready 1 tsp dried tarragon
  6. Prepare 1 tsp dried sage
  7. Take 1 tsp dried thyme
  8. Make ready 1 tsp onion powder
  9. Make ready 2 tsp garlic powder
  10. Make ready 1 tsp salt
  11. Take 1 tsp pepper
  12. Take 160 g wheat gluten
  13. Prepare 40 g pea or soya protein powder
  14. Prepare 1.5 litres vegetable stock

Instructions to make Seitan:

  1. Blitz the tofu, ‘milk’, miso, yeast extract, tarragon, sage, thyme, onion powder, garlic powder, salt and pepper in a food processor until smooth.
  2. Tip into a bowl and add the gluten and protein powder. Mix to form a dough. Then kneed for 10-15mins until springy.
  3. Roll out the mix to approximately 1cm thick and cut into chunks. I like to go for small chicken-breast-sized pieces.
  4. In a large pan, bring the stock to a boil and add the seitan pieces. Simmer for 30 minutes with the lid on.
  5. Allow to cool in the stock. Ideally leave overnight in the fridge.
