- Beat till properly mixed then pour in the veggies and mix.
- Put the groundnut oil or butter in a pan, pour in the egg mixture then place the plantain on it.
- Lower the heat and cover with a lid. Cook for 10 to 15 mins and it is ready. You can equally use an oven to bake at 180°c for 10mins or until it is not runny.
