  1. Boil the spinach and cut into small pieces. Rip off the artichokes, wipe off the excess water, and chop into small pieces as well. Mince the onion.
  2. Heat butter or oil in a pot, and sauté the onion. Please be careful not to burn it. I usually microwave my chopped onions ahead of time to speed up the process.
  3. When the onion starts to become translucent, add in the flour, and mix over low heat until they are well blended. Add the water and consommé and simmer until the mixture thickens. Simmer over very low heat so that it won’t get burned!

  5. Pour the mixture into a dish, and sprinkle with a small amount of cheese. Bake in the oven for about 15-20 minutes at 350°Funtil the cheese is a little bit browned.
  6. Remove from the oven, mix with a spoon while breaking through the cheese. Sprinkle with cheese again, and bake until the surface turns golden brown.
