- Heat the olive oil in a large saucepan.
- Add the vegetables (onion,carrots,parsnip,leek,potato) and cook for about 5 minutes.
- Add the Vegetable Stock water and bring to the boil.Cover and cook for a further 20 minutes.
- Allow to cool to room temperature.
- Pour contents of saucepan into your blender and blend for about 30 seconds until completely smooth.Add more stock or sausage water if required.
- Pour contents back in to the saucepan and add the chilli.Alter the consistency with a little stock or sausage water if desired.Season with salt and pepper if required.
- Simmer for 10 minutes and serve.
