The ingredients needed to make Roast potatoes:

  1. Take Potatoes
  2. Get Olive oil
  3. Prepare Rosemary (optional)

  1. Peel and wash the potatoes. Chop in to rough cubes about 3-4cm. Add to a pan of water and bring to the boil. Preheat the oven to 200°C
  2. Boil for 5 minutes then drain the potatoes.
  3. Return the potatoes to the pan, replace the lid and shake to soften the edges of the potatoes.
  4. Heat a tablespoon or 2 of oil in a large pan or wok and cover the potatoes well. You could season at this stage.
  5. Transfer potatoes to an oven dish and put them in the oven. I added a bit of rosemary at this stage.
  6. The potatoes are ready once they start to turn a golden brown colour (about 30 mins). Good to eat immediately although they might be a bit sausage in the middle so take care!
