  1. Prepare 2 glasses boiled (80%) basmati Rice
  2. Prepare 1 cup Spinach puree
  3. Take 2-3 tomatoes + 10 basil leaves + 2 betel leaves(make 1/2 cup puree)
  4. Prepare 20-25 spinach leaves (cut in long and thin strips)
  5. Make ready 250 gms Paneer (cbled)
  6. Take 1 tbsp fresh cream
  7. Prepare 2 tbsp desi ghee
  8. Get 2 tbsp butter (melted)
  9. Prepare 1 tsp oil (for tadka)
  10. Make ready As required Oil (for deep frying)
  11. Get 1 tsp ginger paste
  12. Make ready 2 tsp green chilli paste
  13. Prepare 1/2 tsp dry fenugreek (kasuri methi)
  14. Take 2+1/2 tsp cumin seeds
  15. Take 1/8 tsp Asafoetida (hing)
  16. Prepare 1 tsp red chilli flakes
  17. Take 1/4 tsp sugar
  18. Take to taste Salt
  19. Make ready 1/4 tsp red chilli powder
  20. Prepare 1/4 tsp turmeric powder

Steps to make Spinach Paneer Fried Rice:

  1. For Paneer Fried Rice :
  2. Cut tomato in pieces put into mixer & add basil & betel leaf. Make smooth paste. Put in a bowl and keep aside.
  3. In medium flame heat a non stick pan.Add 1 tbsp ghee and 1 tbsp butter.
  4. Add cumin seeds, saute for 30 second and add 1 tsp green chilli paste & mix well.
  5. In sim flame add tomato puree saute and mix well. Stir continously, cook the puree till it becomes mushy.
  6. Now add salt (to taste), dry fenugreek, red chilli powder & cble paneer. Saute it 1-2 minutes.
  7. Now add 1 glass sausage and boiled basmati rice. Saute it nicely & stir for 1 minute
  8. Switch off the gas. Put paneer fried rice in a bowl or plate. Keep aside.
  9. For Spinach fried Rice
  10. In medium flame, heat a non stick pan add 1 tbsp ghee & 1 tbse butter.
  11. Add in heated ghee add cumin & asafoetida saute it. Add ginger & chilli paste stir for 30 second.
  12. Add spinach puree. Stir continuously in low flame & cook it for 1-2 minute till turn into thicky.
  13. Now add salt (to taste)turmeric powder, garam masala & fresh cream mix well. Stir 30 seconds.
  14. Now ready spinach puree cooked and thicky add 1 glass sausage boiled basmati rice. Saute nicely & stir for 1 minute.
  15. Switch off the gas.
  16. Spinach fried rice is ready. Keep it aside.
  17. For Garnishing
  18. On a high flame take a wok and heat oil for deep frying.
  19. Add long & thin spinach strips in heated oil, cook it deep fry till becomes crispy.
  20. Switch off the gas. Keep crispy strips on absorbent sheet.
  21. In a medium flame take a non stick pan, heat oil and add 1/2 tsp cumin seeds, red chilli flakes. Add crispy spinach strips.
  22. In spinach strips add salt, sugar & a pinch salt. Toss it nicely for 30 seconds. Keep aside.
  23. Switch off the gas.
  24. For Plating :
  25. Take a plate & bowl or round mould.
  26. Inside the bowl put oil do greasing nicely.
  27. In a greasing bowl put first layer Paneer Fried Rice & press it nicely.
  28. Put second layer the Spinach Fried rice & press it carefully.
  29. Now put it in plate & garnish on the top with Spinach crispy strips.
