  1. Cook sausage in water on medium high heat in a sautee pan, covered. Once the water is evaporated, remove cover and brown for 2 minutes. Remove from pan and set aside.
  2. In same pan add . Cook until all fat is rendered. Remove from pan and set aside. Keep grease in pan.
  3. Add peppers, shallots and garlic. Sautee for a few minutes. Add seasonings and chili paste. Cook another minute.
  4. Add shrimp and cook until they turn pink. About 2 minutes. Add and then deglaze. Add sausage and back to pan. Cook for another minute or two.
  5. Meanwhile, bring water and cream to a boil. Add salt and stir in grits. Cover and turn heat down to low. Cook grits for about five minutes or until done. Perhaps stir once in between the time to prevent lumps.
  6. Serve the shrimp on top of the grits with the garnish on the very top. Enjoy!
