Steps to make Aloo Samosa:

  1. In a ball take all the ingredients of covering and make a hard dough with chilled water.
  2. Cover the dough and leave for 30 minutes.
  3. Heat ghee in a pan,add ginger and coarsely ground spices.Saute for 1 minute.
  4. Cut boiled potatoes into small cubes and add to the pan,add powdered spices and salt also.Mix well.
  5. Add 1 tbsp water and cover the lid.Cook for 2 minutes on low flame.
  6. Mix amchur powder and put off flame.Let filling mixture cool.
  7. Divide the dough into 3-4equall portion.Roll each portion into a thin sheet.Cut from middle.
  8. This will yield 2 samosa coverings.Apply a little water on the cut edge and fold like shown in picture making a triangle.
  9. Fill 1tbsp potatoes filling in the triangle.Apply a little water on the open edges and seal the edges by pressing the edge with fingers.
  10. Prepare all samosas in same way.
  11. Heat oil in a kadahi,deep fry samosas on low -medium heat till golden.
  12. Serve sausage with chutney/sauce.
