Steps to make Alu Samosa:

  1. In bowl add all purpose flour,salt,carom seeds,ghee and mix well until cbled.
  2. Gradually add water and knead until smooth dough is form,cover with a damp cloth and let it rest for 30 min.
  3. In bowl,add potatoes and mash them slightly,add coriander,green chillies,salt,red chilli powder,coriander powder,turmeric powder,chaat masala,whole spice powder and mix well.
  4. In pot, heat oil,cumin seeds and mix,add potato mixture and fry for 2 min and let it cool. - Wet your hands with water and knead the dough again.
  5. Take a small dough,make a ball and coat in dry flour and roll out in oval shape with the help of rolling pin and cut in two halves to make a semi circle shape.
  6. On one side of dough,apply water, join two sides/edges to make a cond and press gently to seal the cone.
  7. Fill the cone with potato filling and seal the edges by applying water and press it gently.
  8. Heat oil in a wok, and fry samosa on medium low flame until golden.
