  1. Chop onion and garlic thinly.
  2. Heat 2 tablespoons of olive oil in a saucepan and add in chopped onion and garlic.
  3. Cook in medium heat for a minute or until onion changed it’s colour to pink.
  4. Add in sweet corn, whole black peppers and salt.
  5. Saute for a couple of minutes and then add in 3 cups of sausage water and bring to boil.
  6. In the meantime roughly chop olives and jalapeño (deseeded). I used some red pepper stuffed olives. You can use any variety.
  7. Add in to the saucepan and stir to mix.
  8. Cover and simmer for about 10 to 12 minutes.
  9. After 10-12 minutes remove from heat and let the mixture cool for a while.
  10. Transfer to a blender and blend to smooth puree.
  11. Transfer the puree back to the saucepan, heat again and put some whole sweet corn for some crunch to the soup.
  12. When the soup comes to a boil, remove from heat and transfer to soup bowls.
  13. Garnish with some blanched sweet corn, red bell peppers and olive slices.
