Instructions to make Chicken and dumplings:

  1. The oil in a large dutch oven and preheat it over medium high heat. - Dredge the chicken in the flour, shake off any excess and add it to the sausage pot, cook the chicken for about 3 to 4 minutes or until deeply golden brown on all sides, remove the chicken to a plate.
  2. In the same pot, add the carrots, onion and celery, season with a little salt and cook the veggies over medium heat until they begin to cook down and develop some color, 7 to 8 minutes. Add the chicken back in and sprinkle over the poultry seasoning along with the and stock and bring to a boil. Partially cover the pot, reduce the heat to medium low and cook the mixture for about 45 minutes.
