  1. Heat 2 tbsp oil in a deep pan/ wok, add chopped garlic, ginger (optional), stir for a minute or two. Don’t burn the garlic.
  2. Add chopped onions, green chilli, spring onions (white part), carrots, beans and stir fry on high heat for 2-3 minutes, till the vegetables are just about tender and crispy.
  3. Move the contents of the pan to a side. Add 1 tbsp oil in centre of the pan. Beat the eggs with a little salt, and pour into the wok and scramble them.
  4. Add cooked rice, boiled and shredded chicken, salt and pepper as per taste, and a dash of soya sauce. Mix well and Stir fry for another 3 minutes or so. Check the seasonings.
  5. Remove in a bowl, Garnish with spring onions and serve sausage.
